1. Clean coriander thoroughly

Soil and impurities in coriander leaves often spoil the taste of chutney.

  • How to clean:
    • Wash coriander leaves thoroughly in water 2-3 times.
    • Fill a bowl with water and soak the leaves for some time, then take them out and wash them again in clean water.
    • Use clean and fresh coriander.

2. Maintain the right balance of spices

Ginger and garlic are used in coriander chutney to enhance the taste, but their quantity should be balanced.

  • Add ginger and garlic in limited quantities, as excess quantity can make the chutney bitter.
  • For 1 cup of coriander, 1 small piece of ginger and 2-3 garlic cloves are enough.

3. Use coriander stalks properly

Many people think that coriander stalks cause bitterness and remove them. But the reality is that the stalks are packed with flavor and nutrition.

    • Use only tender and fresh stalks.
    • Remove thick and dry stalks.

Lemon juice or tamarind paste balances the flavor of the chutney and neutralizes the bitterness.

  • For 1 cup coriander add juice of half lemon or 1 teaspoon tamarind paste.

5. Right proportion of mint and coriander

The use of mint in coriander chutney adds a wonderful flavour, but its quantity needs to be balanced.

  • Keep the ratio of coriander and mint 2:1.

Recipe to make perfect coriander chutney

Required Materials:

  • 1 cup fresh coriander leaves (including stems)
  • 1/2 cup mint leaves
  • 1-2 green chillies (as per taste)
  • 1 small piece ginger
  • 2 garlic cloves
  • 1/2 tsp roasted cumin powder
  • 1 teaspoon lemon juice
  • salt as per taste
