The taste and nutritional value of carrots makes it a great reason to eat it in winters. Be it the main dish, the taste of pickle or the warmth of soup – carrots are special in every form. Here are the recipes of three different and wonderful carrot dishes, which will double the enjoyment of your food.

1. Carrot Rice

Material:

  • Cooked Basmati Rice: 3 cups
  • Grated carrots: 1 cup
  • Finely chopped onion: 1/2 cup
  • Peas: 1/2 cup
  • Chillies cut lengthwise: 2
  • Ginger-garlic paste: 1 teaspoon
  • Curry leaves: 10
  • Roasted cashew nuts: 2 teaspoons
  • Coriander leaves: 2 teaspoons (for garnish)
  • Ghee: 2 spoons
  • Salt: as per taste

Whole Spices:

  • Cloves: 2
  • Green cardamom: 1
  • Mustard: 1/2 tsp
  • Cinnamon: 1 piece
  • Cumin: 1/2 tsp

Dry Spices:

  • Turmeric: 1/2 teaspoon
  • Red chilli powder: 1/2 teaspoon
  • Sambar powder: 1 teaspoon

Method:

  1. Heat ghee in a pan and fry whole spices.
  2. Add mustard, cumin, curry leaves, asafoetida, and green chillies and fry until fragrant.
  3. Add onion and ginger-garlic paste and cook until golden.
  4. Add peas and carrots and fry for two minutes.
  5. Add turmeric, red chilli, sambar powder and salt, mix.
  6. Add cooked rice and mix well.
  7. Garnish with coriander leaves and roasted cashew nuts and serve with raita.

2. Carrot Pickle

Material:

  • Carrots cut into thin slices: 1 cup
  • Nigella seeds: 1/2 teaspoon
  • Fenugreek seeds: 2 teaspoons
  • Mustard: 2 teaspoons
  • Asafoetida: 1/4 teaspoon
  • Red chilli powder: 1 teaspoon
  • Turmeric powder: 1/4 teaspoon
  • Salt: as per taste
  • Mustard oil: 2 teaspoons

Method:

  1. Mix carrots and all the spices.
  2. Heat mustard oil and add it to the mixture.
  3. Mix well and eat immediately or keep it in the refrigerator and use it for 3-4 days.

3. Carrot-Coriander Soup

Material:

  • Chopped Carrots: 5
  • Chopped Onion: 1
  • Ginger-garlic paste: 2 teaspoons
  • Coriander paste: 2 teaspoons
  • Coriander leaves: 1 bunch
  • Olive Oil: 1 tsp
  • Water: 2 cups
  • Salt: as per taste

Method:

  1. Fry onion in olive oil for 5-7 minutes.
  2. Add coriander paste and ginger-garlic paste, fry.
  3. Add carrots, salt, and water and cook on low flame for 20 minutes.
  4. Blend the mixture and serve hot.
