Take care of quality.
If you are making pickles for the whole year, do not compromise the quality of vegetables or pickle content. Use the best quality material for pickle. Mango, lemon, amla, carrots, pickle spices – all fresh and good quality should be purchased.
Fill in a soil or glass jar.
If you want the pickle to be fresh throughout the year and its taste is not spoiled, then make pickles and fill it in a glass or earthen barni. By keeping pickles in plastic or steel utensils, they get spoiled quickly and they also get fungic.
Before filling the pickle, make the jar a germ.
The jar in which pickle is to be filled is also necessary. Clean the jar thoroughly with water and leave it in the sun for a day to dry it properly. Then, sprinkle asafetida or red chili powder on the jar. Pickling this process will not spoil the pickle for a long time.
Use alum

Instead of adding more oil to the pickle, you can use alum. While making pickles for the whole year, mix half a teaspoon of alum powder in one kilo of pickle. This will not spoil the pickle.
This powder will save from fungus
Most of the pickle deteriorates due to this reason. Fungi begins to grow on the upper part of the pickle kept in the jar. This fungus spoils pickles. You can use sodium benzoate powder to protect the pickle from fungus. This powder is easily available in the market. If you add half a teaspoon of sodium benzoate to one kilo of pickle, then there will be no fungus in the pickle.
