Ingredients required for carrot rasmalai

  • Carrot: 300 grams
  • desi ghee
  • dry fruits: As per your choice (like almonds, cashews, pistachios, raisins)
  • Sugar
  • steamed milk: 300 ml
  • Semolina: 150 grams
  • milk powder: 1 tsp
  • saffron milk: 1 tsp
  • cardamom powder: 1 tsp
  • for juice:about 1 liter full cream milk

Carrot Rasmalai Recipe

  1. Carrot preparation: First of all, wash the carrots, peel them and cut them into small pieces. Then put these pieces in the mixer and make a fine paste. Keep in mind, do not add water in it.
  2. Carrot Roast: Place a pan on the gas and add one tablespoon of desi ghee in it. Now add carrot paste to it and fry on medium flame while stirring continuously for 4-5 minutes, until the water in the carrots dries up. The color of the carrots will start changing.
  3. mixing ingredients:At this stage add finely chopped dry fruits and sugar. When the sugar melts completely, add about one and a half cups of boiled milk in it. Then add two-third cup semolina. Fry everything while stirring on low flame. A soft dough will be ready in 2-3 minutes. Turn off the gas and cover and keep it aside for 10 minutes.
  4. making rabri: Take 1 liter full cream milk in a pan and boil it on high flame. Add milk powder, saffron milk, chopped dry fruits and sugar in it. Cook the milk while stirring until it thickens and then keep it aside to cool.
  5. making rasmalai balls: Take the mixture of carrot and semolina and knead it well and make small balls. Place them in a pan and cook with water steam. These will be cooked in 10-15 minutes.
  6. to serve: Take a vessel and place steamed soft rasmalai in it. Pour cold rabri over it and keep it in the fridge to set for 10 minutes.

Now your soft, melt-in-the-mouth carrot rasmalai is ready! Enjoy chilled Rasmalai and enjoy this winter season.
