A traditional and very famous cuisine of Rajasthan is Dal-Bati. It is a delicious and traditional dish that is served with hot lentils and baati immersed in spicy ghee. This dishes are made from wheat flour and cooked well until it turns brown. Dal is a mixture of pigeon alra, moong and gram. If you eat it by adding ghee on top, then its taste will become indescribable.

Material

  • Wheat flour – 2 cups
  • Rava – 4 cups
  • salt to taste
  • Oats – ½ tsp
  • Baking Soda – 4 teaspoons
  • Plain ghee – 3 tablespoons
  • Hot water – to knead
  • Ghee – to put in a bowl
  • For lentils (mixed pulses):
  • Arhar dal – 4 cups
  • Chana – 4 cups
  • Peanut – 4 cups
  • Urad dal – 2 tablespoons
  • Dal – 2 tablespoons (optional)
  • Turmeric – ½ tsp
  • salt to taste
  • Asafoetida – 1 pinch
  • Cumin – ½ tsp
  • Ginger-garlic paste-1 tsp
  • Green Chilli-1-2 (chopped)
  • Tomato – 1 medium (finely chopped)
  • Turmeric, chili powder – as required
  • Plain ghee – 2 tablespoons
  • Coriander – for decoration

Action:

  • To make dal baati, first of all add flour, semolina, salt, turmeric, baking soda and ghee to a bowl.
  • Knead thick dough with hot water.
  • Make small dough balls of flour and make potato-shaped dough.
  • Fry the Kharpus in the oven or on a medium flame (30-35 minutes) on the oven.
  • After roasting, immerse the hot balls in the appropriate amount of ghee.
  • Wash all the pulses and soak for 30 minutes.
  • Add lentils, turmeric, salt and 3 cups of water to a cooker and cook till 3-4 whistles.
  • Heat ghee in a pan and add cumin, asafoetida, ginger-garlic paste, chilli, tomato, turmeric and chili powder to it.
  • Fry it for some time and then add cooked lentils to it and boil it well.
  • Finally add coriander and cover it.
  • Dip the hot baati in ghee and add hot lentils on it and serve the prepared dal baati.
  • If you want, you can also serve it with garlic sauce.
