Material
- Besan: 1 cup
- Flax seed powder: 1 teaspoon
- Fresh Yogurt: 4-5 tablespoons
- Salt: as per taste
- Water: 1/3 cup
- Onion: 1 (finely chopped)
- Capsicum: 1/2 (chopped)
- Carrots: 1/2 (chopped)
- Tomato: 1/2 (chopped)
- Green Chilli: 2
- Turmeric: 2 teaspoons
- Red chili: 1 teaspoon
- Green coriander: finely chopped
Method of making eggless bhurji
- Prepare the batter: Make a thick batter by adding gram flour, flax seeds powder, curd, water and salt to a large bowl. This batter should be like a batter of the dosa.
- Fry the vegetables: Heat a pan or griddle on the gas. Add a little oil to it and add mustard seeds and chop it. Then add chopped onion and fry till it turns golden.
- Mix tomatoes and vegetables: Add tomatoes and cook them until they become soft. Then add capsicum, carrot and green chili and cook the vegetables.
- Add spices: Add turmeric, cumin powder and red chili powder when cooking. Mix everything well.
- Add the batter: Spread the vegetables on the pan and then add gram flour batter on top. Spread the batter on the entire pan.
- Allow to cook: Cover it and let it cook for a few minutes. When gram flour starts cooking lightly, keep stirring it. Keep cooking until its texture turns like a bhurji and the color does not turn slightly brown.
- Serve: After cooking, serve the hot bhurji with parathas, roti or bread.
