Material
- 2 ripe but hard mango (peeled and finely chopped)
- 1/2 cup sugar or taste
- 1/4 cup vinegar (white or apple cider)
- 1/4 teaspoon red chili powder or taste
- 1/4 teaspoon ginger
- a pinch of salt
- Some raisins or chopped fruits
Action
- For this, first of all add chopped mangoes, sugar, vinegar, red chili, ginger and salt in a saucepan.
- Now boil this mixture on medium heat and keep stirring in between.
- Remove the heat and keep cooking for 15-20 minutes or until the mango becomes soft and the sauce is thick.
- To prevent the sauce from sticking to the pan, keep stirring it in between.
- A few minutes before the heat is closed, add raisins or chopped cashews and mix well with the sauce.
- Now turn off the gas and let the chutney cool down.
- The sauce will become even more thick when it is cold.
- Now fill this prepared chutney in an airtight container and keep it in the fridge.
- You can store this sauce for several weeks.
