Materials required to make rasgulla from semolina

To make rasgulla you need:

  • Semolina – ½ cup
  • Sugar – 4 cups
  • Desi Ghee – 1 teaspoon
  • Milk – 1½ cups
  • Sugar for sugar syrup – 2 cups
  • For flavor – cardamom powder, rose water or Kevada water (as per your choice)

Step 1: Prepare Sugar System

  1. Add 2 cups of sugar and about 2 cups of water in a pan.
  2. Cardamom powder, rose water or Kevada water can be added to it.
  3. Cook until the syrup comes to a boil and then turn off the gas. Leave it lukewarm.

Step 2: Prepare semolina dow

  1. Heat desi ghee in a pan and add milk to it.
  2. Now slowly keep stirring the semolina continuously, so that there is no lump.
  3. Add 4 cups of sugar and cardamom powder and mix well.
  4. When the mixture thickened and leaves the pan, remove it from the gas.
  5. Cool this mixture lightly and mash it like flour and make smooth do.
  6. Now make small tablets (rasgulla balls) from this do.

Step 3: Cook Rasgulla

  1. Heat the prepared sugar syrup again and add semolina balls to it.
  2. Cover and cook for 3-5 minutes, until the rasgulla flowers lightly.
  3. Turn off the gas and allow the rasgullas to be immersed in the syrup for 15 minutes, so that they become sweet and juicy.
