Required material
To fry eggs
- 1 tbsp oil
- 4 teaspoons turmeric powder
- 4 teaspoons Kashmiri Red Chili Powder
- 6 boiled eggs
Egg curry spice paste to make
- 1 cup grated dry coconut
- 6-8 cloves
- 1 inch cinnamon
- 1 big cardamom
- 4-5 pepper
- 1 teaspoon cumin
- 1 tbsp of whole coriander
- 1 tbsp white mole
- 2 teaspoons chopped green chili
- 2 tablespoons green coriander
- ½ cup chopped tomatoes
To make egg curry
- 4 tablespoons oil
- 1 teaspoon cumin
- ½ cup chopped onion
- 2 teaspoons Kashmiri Red Chili Powder
- 2 teaspoon onion-garlic paste
- ½ teaspoon turmeric powder
- 1 teaspoon salt (as per taste)
Method of making Kolhapuri egg curry
1 fry eggs
- Apply the boiled eggs lightly.
- Heat the oil in the pan, add turmeric and red chili powder to it.
- Now add eggs and fry till it becomes light golden.
2 Prepare Masala Paste
- Add dry coconut, cloves, cinnamon, cardamom, black pepper, cumin, coriander and sesame to a pan and fry lightly.
- After cooling, grind it with green chillies, coriander, tomatoes and ½ cup of water and make a paste.
Prepare 3 Egg Curry
- Heat the oil in the pan, add cumin seeds and add it.
- Add chopped onion and fry until golden brown.
- Now add prepared masala paste and fry for 3-4 minutes.
- Add Kashmiri red chili, onion-garlic paste and turmeric and fry it again.
- Now add fryed eggs, 2 cups of water and salt.
- Cook for 5 minutes and turn off the gas.
Now serve the hot Kolhapuri egg curry with roti, naan or rice and enjoy the wonderful taste!
