This Gujarati dish is cooked in steam, which makes this oil less absorbed and is easy to digest. You can serve it with green chutney, masala tea and fried green chillies. Materials required to make poha dhokla
For Dhokla Batter:
- Poha – ½ cup
- Semolina – ½ cup
- Besan – 4 cups
- Plain yogurt – ½ cup
- Water – 4 cups
- Turmeric Powder – 4 tablespoons
- Ginger paste – ½ teaspoon
- Sugar – 1 teaspoon
- Salt – 1 teaspoon
- Oil – 2 tablespoons
- Green chili paste – 1 teaspoon
- Eno Fruit Salt – 1 teaspoon
For tempering:
- Oil – 1 tbsp
- Rye (mustard seeds) – 1 teaspoon
- Cumin – 1 teaspoon
- White sesame – 1 teaspoon
- Green chillies (chopped) – 2 tablespoons
- Curry leaves-10-12
- Asafoetida – ½ tsp
Method of making poha dhokla
- Grease the steamer plate – first apply oil on a steamer plate and keep it aside.
- Prepare the dry mixture – Make thick powder by adding poha, semolina and gram flour in the grinder.
- Prepare the batter – Take out this powder in a vessel, then add curd and water to it and whisk well.
- Now add turmeric, ginger paste, sugar, salt, oil and green chili paste and mix well.
- Keep the batter covered for 20 minutes, so that it becomes bloated and set.
- Prepare the steamer – Meanwhile add 1 cup of water in the steamer and boil on high flame.
- Now add some water to the batter and make it like an idli batter.
- Enter the eno fruit salt – When the batter is fully ready, add the eno and mix it immediately.
- Now put the batter in the steamer plate, sprinkle light red chili and black pepper powder on top.
- Cook in steam – Close the lid by placing a plate in a steamer and cook in steam on high flame for 10 minutes.
- Check the ripening – Check by adding a knife, if the knife comes out clean then the dhokla is ready.
- Cool and cut – Remove from the steamer and cool for 10 minutes, then cut it with a knife into square pieces.
Way of tempering
- Heat oil in a small pan.
- Add mustard seeds, cumin, sesame, chopped green chillies, curry leaves and asafoetida.
- When the tempering starts, put it on top of the dhokla.
- Now serve hot poha dhokla with green chutney and masala tea.
