1. Chinese Chicken Sweet Corn Soup
Material:
- Chicken Breasts: 100 grams
- Garlic: 4 cloves
- Ginger: 1 piece
- Coriander leaves: 4 teaspoons
- Crushed black pepper: 1 teaspoon
- Corn flour: 2 spoons
- Egg: 1
- Sweet Corn: 1/2 cup
- Finely chopped green onion: 2 teaspoons
- Salt: as per taste
Method:
- Heat two cups of water in a pan. Add chicken, ginger-garlic mixture and coriander and boil for 15 minutes.
- Strain the chicken stock, set aside and cut the chicken into small pieces.
- Pour the chicken stock into another pan and boil. Add chicken pieces, sweet corn, green onion, and corn flour and mix well.
- Beat the egg in a bowl and slowly pour it into the soup.
- Season with salt and pepper and serve hot.
2. Tomato Noodle Soup
Material:
- Tomato: 4
- Onion: 2
- Olive Oil: 1 tsp
- Salt: as per taste
- Black pepper powder: as per taste
- Hakka Noodles: 200 grams
Method:
- Boil water, add noodles and boil.
- Chop onion and tomato and heat olive oil in a pan. Fry onion, add tomatoes and cook for 5-6 minutes.
- Add two cups of water to it and boil it, then add salt.
- Cool the mixture, grind it in a grinder, filter it and heat the soup.
- Add noodles, salt, and pepper and serve with garlic bread.
3. Roasted Cauliflower Soup
Material:
- Cauliflower florets: 2 cups
- Finely chopped celery leaves: 1/2 cup
- Olive Oil: 2 tsp
- Garlic: 5 cloves
- Salt: as per taste
- Milk: 1 cup
- Water: 1/2 cup
- Black pepper powder: as per taste
- Butter: 1 tsp
Method:
- Heat olive oil in a pan, add garlic and celery and fry for a minute.
- Add cabbage, sprinkle salt and fry on high flame for 4-6 minutes.
- Sprinkle light water, cover the pan and cook the cauliflower for 5 minutes.
- When it cools down, put all the ingredients in a grinder and make a paste.
- Heat butter, add cauliflower puree, then add water, milk and black pepper and bring to a boil. Serve hot.
