It is a small machine set up that blends complex flavors into innovative drinks, saves the bartender some time and effort and also gives you that perfect foam over your drink. The result is a cocktail that is exceptionally smooth, with layers of taste unfolding gradually.

Crafted with Bacardi Carta Blanca, orange liqueur, macadamia nuts, lime, and a float of Mount Gay Eclipse, this version also features a passion fruit foam made with an emulsifier. The richness of nuts infused in rum lends a buttery depth to the cocktail, while the tangy passion fruit foam adds a refreshing contrast. Every sip is a delightful balance of nuttiness, citrusy brightness, and a smooth, oaky finish from the dark rum.

What we found interesting was that, before the starters arrived, HyLo makes sure their customers stay busy at the table by tasting a few more of their complimentary items. They provide a unique farsaan mix and varities of chutneys on the tables for you to relish in till the food makes it to your table.
