Ingredients required to make ginger pickle
- Ginger: 100 grams (wash, peel and cut)
- Tamarind: 100 grams (soak in lukewarm water and remove pulp)
- Garlic: 10-12 buds
- Oil: As per requirement
- black mustard seeds: 1 tsp
- black pepper: 1 tsp
- Cumin: 1 tsp
- Asafoetida: a pinch
- whole coriander: 1 tsp
- urad dal: 1 tsp
- Chickpea lentil: 1 tsp
- Jaggery: as per taste
- rye: 1 tsp
- whole red chilli:2-3
- Curry leaf: 8-10 leaves
- Salt: as per taste
- black salt: 1/2 teaspoon
- Vinegar: 1 tsp
Ginger pickle recipe
- Prepare Ginger and Tamarind,
- Wash the ginger, peel it and cut it into small pieces.
- Soak the tamarind in lukewarm water and let it soften. Then crush it and take out the pulp.

- Heat oil in a pan.
- Add mustard seeds, black pepper, cumin, whole coriander, urad dal and chana dal in it.
- When the spices crackle, add garlic and chopped ginger.
