Many beneficial foods are available to keep the body strong in winter. The need for immunity and energy is high during this season, and winter foods are ideal for this. Our immunity is supported by the presence of good bacteria in the stomach. Consuming fermented foods is important to increase these gut bacteria, and Kanji is one of them. Rice kanji is popular in summers, while in winters you can make kanji with amla, beetroot, turmeric and various vegetables. Here’s an easy recipe.
Material:
- Gooseberry
- raw turmeric
- yellow mustard
- grated ginger
- Water
- black salt
- white salt
- black pepper
Method:
- First of all peel the gooseberry and turmeric.
- Fill a glass jar with water and add chopped amla and turmeric to it.
- Grind yellow mustard and roasted cumin and add it.
- Now add ground black pepper, a little white salt and black salt to it.
- After mixing all the ingredients, add more water to the jar and cover with a lid and keep it at room temperature for 3-4 days. Keeping it in sunlight in winter improves the fermentation process.
- After fermentation, the kanji will have a sour taste. Drink it in a small glass every day.
